Almond flour blueberry, hemp, chia seed muffins. My kids start school tomorrow and we discussed breakfast ideas that would give them a nutrient dense pack full of a punch. One suggestion were muffins! So, of course, I chose grain free with my added nutrient dense pack full with hemp seeds and protein. Combine this with a bowl of plain goat yogurt and they will last hours at school without the energy dip that cereal gives kids.
2 1/4c almond flour
1tsp baking soda
1/4c butter or other fat (oil)
1/4c of almond milk
3 eggs
3 tbsp honey
1 tsp lemon juice
1c blueberries
1/4c hemp seeds
1/8c chia seeds
Preheat oven to 350 and cook for 15-18 minutes!
